Chestnuts and chestnut flour
Chestnuts
Our farm has 5 hectares of chestnut grove composed of the Bastarda Rossa and Marrone species. The Bastarda Rossa is a sweet-tasting chestnut, of good value, particularly popular for fresh consumption, while Marrone is considered a valuable chestnut, with a sweet and delicate flavor, suitable to be consumed both fresh and for confectionery preparations. Our company is part of the “association for the enhancement of the chestnut of Monte Amiata”, an association created to defend the typicality of the Amiata product, which has always been part of the culinary tradition of Mount Amiata. After the harvest, in October, the chestnuts are dried and ground with stone mills to obtain a genuine chestnut flour rich in nutritional properties.
Extra virgin olive oil
The extra virgin olive oil we produce is obtained exclusively from the fruits of the olive groves that are located in the valleys surrounding the town of Montelaterone, at about 650 meters above sea level. We have about 500 plants including the Seggianese olive tree, the Leccino and the Moraiolo. The pressing of the olives takes place in a continuous cycle with cold extraction to guarantee a higher quality of the product. We are part of the Tuscan Extra Virgin Olive Oil Consortium PGI Olive Oil.
The noble soils, the particularly favorable climatic environment and the cold extraction of specialized mills that work in compliance with tradition, give rise to an excellent quality EVO oil.
Honey
Our honey is exclusively local, in the spring our bees produce wildflower honey, acacia and facelia, while in the summer chestnut and scrub honey. The product is extracted in an artisanal way in the company’s small laboratory to guarantee authenticity and quality.
